Pumpkin Pancakes

Maple Walnut Bread Recipe

2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar

1. In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.

2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot with Ben’s Pure Maple Syrup.

Maple Leaf Buttermilk Pancakes

2 c. Ben’s Buttermilk Pancake Mix
1-3/4 c. water
1 egg
2 tbsp. canola oil

Mix all ingredients until smooth. If using a mold, spray inside of mold. Pour in 1/3 cup of batter. Cook for 3 to 4 minutes until set and sides slightly pull away from the mold. Remove mold and flip over to finish cooking, about 2 minutes. Serve hot with butter and Ben’s Pure Maple Syrup.


Maple French Toast

2 eggs
2/3 cup milk
1/3 cup Ben’s Pure Maple Syrup
2 Tablespoons cream
1/4 teaspoon salt
Dash of cinnamon

1: Beat the eggs until light. Whisk the milk, Ben’s maple syrup, cream, salt, and cinnamon to taste.
2: Dip slices of bread in the egg mixture, one at a time, turning to coat both sides.
3: Heat a large skillet or griddle over medium heat, then butter it lightly. Cook the bread for 2 or 3 minutes on each side, or until golden brown. Keep warm.
4: Repeat with remaining bread and batter. Serve with warm maple syrup.


Maple Apple Muffins


2 eggs (beaten)
1/2 cup butter or margarine
1 cup Ben’s Pure Maple Syrup
2 cups chopped apples
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg


1. Preheat oven to 350 degrees.
2. Cream eggs and butter/margarine in bowl until light and fluffy
3. Add maple syrup and apples.
4. Mix well.
5. Sift in dry ingredients and stir until moistened.
6. Put into greased muffin tins.
7. Bake 20 – 25 minutes.

Makes 12 medium-sized muffins.


Easy Maple Cinnamon Rolls

Easy Maple Cinnamon Rolls Recipe

2 cups Ben’s Buttermilk Pancake Mix
1/2 cup melted butter
2/3 cup milk
1/4 cup Ben’s Maple Sugar
1/4 cup maple sugar mixed with 3 tblsp. cinnamon

Combine Ben’s Buttermilk Pancake Mix, 1/4 cup maple sugar, and milk, mixing lightly with fork. Turn onto surface dusted with Ben’s Buttermilk Pancake Mix. Roll or pat dough into 1/4″ thick rectangle about 8″ by 4″. Spread with melted butter and sprinkle top with maple sugar and cinnamon. Roll up and cut into 1″ sections. Place close together on greased pan or in greased muffin tins. Spread rest of the melted butter over rolls. Bake in preheated oven 365 degrees for 7 to 12 minutes or until golden brown.



Maple Butter Frosting

1/2 cup butter, softened
3 cups confectioners sugar
4-6 tablespoons Ben’s Pure Maple Syrup

1: Using an electric mixer, thoroughly cream together the butter and sugar, then gradually add Ben’s Pure Maple Syrup until the frosting is light and spreadable.

2: Once cinnamon rolls are cooled, spread frosting over rolls.
