This Maple Sweet Potato Hash brings together caramelized sweet potatoes, onions, and peppers, all drizzled with Ben’s 100% Pure Maple Syrup for a touch of natural sweetness. Topped with perfectly cooked eggs, it’s the kind of breakfast that keeps you full, satisfied, and ready to take on the day.

Ingredients
2 large sweet potatoes, peeled and diced into small cubes
1 red bell pepper, diced
1 small red onion, diced
2 tablespoon olive oil

3 tablespoons Ben’s 100% pure Maple syrup
1 teaspoon smoked paprika
½ teaspoon cinnamon
Salt and black pepper to taste
2-4 large eggs (depends on serving)
Fresh parsley (optional for garnish)
Directions
Dice the sweet potatoes into small, even cubes to ensure they cook quickly and evenly
Heat olive oil in a large skillet over medium heat. Add the sweet potatoes and cook for 10–12 minutes, stirring occasionally until they start to soften
Stir in the diced red pepper and onion. Cook for another 5 minutes until the vegetables are tender and slightly caramelized.
Drizzle Ben’s Maple Syrup over the hash, then sprinkle with smoked paprika, cinnamon, salt, and pepper. Stir well and let the syrup glaze the vegetables for 2–3 minutes.
In a separate pan, fry eggs sunny-side-up (or however you prefer them).
