Ingredients
- ½ c. Pearl Barley
- 3 strips thick cut Bacon
- 1 tsp. Maple Syrup
- ½ c. Baby Spinach
- 1 Tomato
- Chives
- 2 Tbsp Maple Vinaigrette
- 1 Lemon
Directions
- Serves 2. Cook Barley according to package instructions.
- Sautee bacon in a small skillet on medium-low until crispy
- Remove bacon to a small bowl and add toss with maple syrup, set aside.
- Pour the bacon fat from the pan and add the spinach. (The spinach will wilt from the heat of the pan.)
- Season spinach with salt and pepper.
- Cut the tomato into small pieces.
- Now, assemble your grain bowl. Add the cooked barley, spinach, tomatoes, and bacon to a bowl.
- Drizzle with maple vinaigrette.
- Top with thinly sliced chives and a squeeze of fresh lemon.
