Maple Sugar Yeasted Waffles Recipe

Ingredients
1 ½ cup lukewarm milk
2 large eggs
1 tsp vanilla extract
6 tbsp melted butter
2 cups all purpose flour
1 ½ tsp yeast

4 tbsp Maple Sugar (divided)
¾ tsp salt
Directions
In a small bowl mix the milk, eggs, butter, vanilla extract together
In a large bowl (with room for the batter to expand) mix the flour, yeast, 2 tbsp of maple sugar and salt
Add the wet to the dry and mix (there will be small lumps - don’t worry!)
Cover the batter and let rest for 1 hr a room temperature or in the fridge overnight
Batter that has been rested overnight will have a delightful yeasty flavor
Right before you are ready to cook, very gently fold in the last 2 tbsp of maple sugar
Preheat your waffle iron 5-10 minutes before you are ready to cook
Fill the iron with ½ - ¾ cups of the batter and cook until the waffle is golden brown
Enjoy just as they are or with some butter and another sprinkle of crunchy maple sugar!
