Maple Balsamic Glazed Grilled Cheese with Caramelized Onions & Apple

This is a twist on a classic grilled cheese, but instead of using sugar to balance the onions or a jam on the sandwich, we use maple syrup for sweetness. It’s savory, melty, tangy, and just a touch sweet, perfect for a cozy lunch.

Ingredients
4 slices of hearty bread (sourdough or multigrain works well)
1 apple, thinly sliced (Honeycrisp or Fuji recommended)
1 medium onion, thinly sliced
1 ½ tbsp unsalted butter
1 tbsp olive oil
1 tbsp balsamic vinegar
2 tbsp pure maple syrup
4 slices sharp cheddar cheese (or Gouda for smokiness)
2 slices prosciutto (optional, for saltiness)
Pinch of salt & black pepper
Directions
Caramelize the onions
In a skillet over medium-low heat, add olive oil and onions. Cook slowly for 10–12 minutes until soft.
Stir in balsamic vinegar and maple syrup, cooking for another 3–4 minutes until glossy and caramelized. Season with a pinch of salt and pepper.
Assemble the sandwich
Lay out bread slices. Layer cheddar (or Gouda), apple slices, caramelized onions, and prosciutto (if using). Top with another slice of cheese and the second slice of bread.
Grill the sandwich
Melt butter in a skillet over medium heat. Place sandwiches in the pan and cook until golden and crispy on both sides, and cheese is melted (about 3–4 minutes per side)
Serve
Slice diagonally and serve warm, maybe with a simple arugula salad drizzled in a maple-mustard vinaigrette
