Maple Baked Rice Pudding

This recipe was way better than expected! And leftovers were enjoyed straight from the fridge like a bar/brownie! Baking with pure maple sugar is a healthy alternative, try replacing any white refined sugar for maple sugar next time.
Ingredients
- 2 cups milk
- 1 cup water
- 1 ¼ cup short grain white rice uncooked
- ¼ cup maple sugar
- Pinch salt
- 1 tsp cinnamon
- 3 eggs beaten and at room temperature
- ⅓ cup butter cut into pieces
- 1 tsp baking powder
- Maple syrup for serving
Directions
- Preheat oven to 350 degrees F and butter a medium baking dish (10x6 size).
- Bring the milk, water, rice, maple sugar, salt, and cinnamon to a boil.
- Reduce heat to simmer and stir until the rice is cooked (about 20 minutes).
- Remove from heat and add in the eggs, butter, raisins, and baking powder (careful it doesn’t clump). Stir very well to combine all ingredients.
- Cover dish with foil and bake 30 minutes. Uncover and bake another 10 minutes to brown.
- Remove from oven, slice and serve warm with maple syrup.
