This is a great meal to enjoy the peach season. Serve with a green side salad and a loaf of crusty bread! You will just need a grill and large skillet to get cooking!
Ingredients
-
¼ cup honey
¼ cup balsamic vinegar
2 tablespoons butter
1 tablespoon olive oil
4 peaches split lengthwise and pit removed
chicken breasts trimmed (for 4 servings)
Salt, Pepper, Garlic Powder
Fresh Herbs (Thyme or Basil)
Directions
In the skillet, melt the butter over medium heat. Turn off heat and whisk in honey and balsamic vinegar.
Set the peaches in the skillet, flesh side down to coat with the honey balsamic sauce.
Oil and season the chicken with garlic powder, salt, and pepper.
Prep the grill by heating on high and brushing with oil.
Lay the chicken breasts down and cook about 5 minutes.
Set the peaches flesh side down on the hot grill for about 2 minutes, this depends on size and ripeness, they should get grill marks and slightly soften.
Set peaches in skillet with the sauce over low heat.
Flip the chicken breasts and cook about 7 more minutes covered.
As the chicken finishes cooking, bring the skillet with peaches to medium heat and then add chicken.
Plate the chicken and peaches and drizzle with remaining honey balsamic sauce, serve warm.
