A shrub is similar to a simple syrup but rather than simply being sweet it is a refreshing and curious combination of sweet and sour.

Ingredients
- 1-2 large grapefruit peeled and chopped (seeds removed)
- 4 cups of peeled, chopped, seeded oranges, mandarin, or clementineÂ
- ¾ cup Ben’s Maple Syrup
- 2 sprig fresh rosemaryÂ
- â…“ cup white wine vinegarÂ
- Maple sugar and sea salt for glass garnish
Directions
- In a large glass container such as a mason jar add the fruit, rosemary, and maple syrup. Mash the fruit with a muddler, add a lid and give a shake to distribute the syrup.
- Set the jar in the refrigerator for 48 hours, giving it a shake occasionally.
- Remove the jar from the refrigerator and pour the fruit and maple mixture into a blender. Discard the rosemary. Pulse a few times and then pour through a fine mesh sieve into a clean jar with a lid.
- Add the vinegar and stir to combine. Let the mixture sit in the fridge covered for 24 hours.
- To serve, add ice cubes to a highball glass garnished with salt and maple sugar. Pour the citrus syrup in, top with soda water and enjoy!
