Maple Vinaigrette w/ Shaved Spring Veggies

Use on your favorite salads or veggies!
For this recipe I used fresh asparagus, mint, chives, and local quail eggs to build an early spring salad! I shaved the asparagus and soaked it in ice water for 10 minutes to make it crispy and curly.
Ingredients
- 1 Tbsp Maple Syrup
- 1 tsp Dijon Mustard
- 1 tsp. Vinegar, apple cider or rice wine
- ½ c Avocado Oil
- Salt
- Pepper
Maple Vinaigrette
Directions
Whisk together maple syrup, mustard, vinegar
Add salt and pepper to taste
Slowly drizzle in oil and whisk until the vinaigrette is fully combined
