Maple Browned Butter Cream Cheese Frosting Carrot Cake Recipe

This frosting is excellent on carrot cake, chocolate cake, vanilla cake, cinnamon rolls, waffles, or simply eaten by the spoonful!
Ingredients
- 8 ounces Cream Cheese
- 1/2 cup salted Butter, softened to room temperature
- 3 cups powdered Sugar

1 cup Granulated Maple Sugar 🍁
- 1 tablespoon Vanilla
- 2 ¼ cups All-Purpose Flour
- 2 tsp. Ground Cinnamon
- 1/2 tsp. Ground Cardamom
- 2 ½ tsp. Baking Powder
- ½ tsp Salt
- 3 cups Grated Carrots
- ½ cup Applesauce
- ½ cup chopped Pecans

3/4 cup 100% Pure Maple Syrup 🍁 (room temperature)
- ½ cup Granulated Cane Sugar
- ¾ cup Extra Virgin Olive Oil
- 4 large Eggs
- 1 tsp. Vanilla Extract

Directions
Frosting Directions:
- In a pan over medium heat, melt the butter.
- Stir the butter while cooking, it will get foamy and then start turning brown.
- Once the butter is a caramel color remove from heat and transfer to a heat proof bowl and chill to room temperature.
- Cream together the room temperature brown butter, cream cheese, and vanilla. Beat for 2 minutes.
- Add sugars gradually, mixing on low and scraping down the bowl occasionally.
Carrot Cake Directions
- Preheat oven to 350°F, grease and flour baking pan. This recipe fits a 9x13 cake pan or 2 6 inch round pans.
- In a small bowl, mix flour, baking powder, salt, cinnamon, cardamom, pecans, and set aside.
- In a mixing bowl beat the sugar, vanilla and eggs on medium speed for 1 minute until it thickens.
- Turn the mixer to low speed and drizzle in the maple syrup, and oil. Increase speed for 30 seconds.
- With the mixer stopped add in the dry ingredients and then turn on low speed until just combined, do not over mix.
- Stir in the carrots with a spatula making sure all is combined.
- Fill pan and bake on center rack in preheated oven.
- Bake for 25-35 minutes or until edges are slightly brown and a toothpick inserted in center of cake comes out clean.
- Let cool 10 minutes before removing cake from pan.
- Allow cake to cool completely before frosting.
- Frost the cooled cake and enjoy!
