Ingredients
- 1 flax ‘egg’ (1 tablespoon ground flax meal + 2 tablespoons water)*
- 1 1/4 cup flour
- 1/2 teaspoon baking powder
- 1/2 cup dark brown sugar*
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt (only if butter is unsalted)
- 1/4 cup + 2 tablespoons melted butter (6 tablespoons total)
-
1/4 cup Ben’s 100% Pure Maple Syrup
- 1 teaspoon vanilla extract
- 1/3 - 1/2 cup Ben’s Sugar Shack Maple Cream
Frosting:
Directions
- Preheat the oven to 350 degrees.
- Make your flax egg by whisking together ground flax and water in a small bowl. Set aside.
- In a medium bowl, whisk together the flour, baking powder, brown sugar, cinnamon, and salt. When measuring the flour, spoon it into the measuring cup, don’t scoop it. Then use a knife to scrape the top.
- In a separate bowl, whisk together the flax egg, melted butter, maple syrup, and vanilla.
- Add the wet ingredients to the dry and fold using a rubber scraper or wooden spoon until fully combined. The batter will be very thick and sticky.
- Spread the batter into a parchment lined (or well greased) 8x8 pan. Use a rubber scraper or spatula to spread out the batter. It will be thin in the pan and that’s okay!
- Cook for 20-23 minutes or until the tip is golden brown and a toothpick comes out clean.
- Allow to cool before frosting with ben sugar shack’s maple cream. Use anywhere from 1/3 to 1/2 cup and spread it with a rubber scraper or butter knife.
- Cut into 9 squares and enjoy immediately. Store any leftovers in an airtight container in the fridge for 3-4 days.
